You have to sync your iphone/touch if you want music on it because some of the folders are "locked up". Jailbreaking your iphone/touch allows you to download free apps/songs/videos and allows you to alter files inside your iphone/touch freely.
Jailbreaking is potentially unsafe but jailbreakme works great. If some freak accident does occur during jailbreaking, consider your iphone/touch dead, and the warranty out of the window.
