They're a lattice of ribbon controllers(same as a kaoss pad) with pressure sensors underneath with a neoprene surface.
They wouldn't cost that much to make, only they're all hand made.

Actually they're laser etched into the nylon surface... yes I've considered buying one but this thing is way out of my budget :(

It's just a touch sensitive pad that generates a frequency depending on where it's touched.
