fish SAUCE.
in case you didn't know, you use fish sauce in all thai dishes that's what makes it good!!

Obviously, not only Pad Thai but all Thai food!!!
If you have a visit to Thailand, never forget to tell the waiters/waitresses that not spicy please or you'd get heartburn --- !!!
Tom-Yum-Goong in American is like a tasteless soup with shrimps compared to Tom-Yum-Goong in Thailand :P

If you buy your ingredients from an Asian store they will cost a lot less. Western supermarkets usually overprice things like fish sauce because they don't buy or sell in great quantities.
Also, remember that many of the ingredients can be used to make Pad Thai again (fish sauce, vinegar, tamarind sauce, peanuts , roasted peppers etc) |
